James “Jimmy” Palmas, a beloved father, grandfather, and friend, passed away on March 31, 2026, leaving behind a legacy of warmth, resilience, and unforgettable meals shared around the table.

Jimmy was born Demetries Petmezas on October 10, 1934, in Kandila, Greece, to Nicholas and Eleni Petmezas. He carried with him a deep love for his heritage, his family, and the simple joys of life. At the age of 20, he bravely left his home in Greece, arriving in the United States through Ellis Island aboard the Queen Frederica in 1955—a journey that marked the beginning of an extraordinary life.

Jimmy was known throughout the central Iowa community as a gifted chef and proud owner and operator of Palmas Restaurant in Ames and Newton - a fine dining supper club he devoted more than 30 years to building. His kitchen was his stage, and every dish reflected his pride, skill, and generous spirit. He was known for his legendary Steak DeBurgo, which to this day is remembered as the best DeBurgo sauce in the Des Moines area.

After retiring from the restaurant, Jimmy was drawn back into the kitchen by his daughter Ellie and her husband Dave, helping them develop recipes and lay the foundation for what would become Z’Mariks Noodle Café. His knowledge, mentorship, and passion for the craft helped shape the restaurant into the success it remains today—a lasting extension of his legacy.

Jimmy had a sharp mind, a quick wit, and a wonderful sense of humor. He loved a good card game, often with a Michelob or a shot of Ouzo by his side. He also enjoyed the thrill of a little risk—whether at the casino, the horse races, or following football—always with a story to tell. He was a devoted fan of the Chicago Cubs—his beloved “Cubbies”—and found great joy in gardening, proudly growing tomatoes and cucumbers that were second to none.

Later in life, Jimmy spent time in Florida enjoying years with his daughter Debbie and her family, where he especially loved spending time in Tarpon Springs. He later returned to Waukee, Iowa, where he spent his remaining years with family and reconnecting with his Greek buddies.

Jimmy was preceded in death by his parents, his four sisters and one brother, and his wife, Grace Palmas.

He is lovingly remembered by his children: Debbie Campbell (Allan), Chris Palmas, and Ellie Allen (David); as well as his first wife, Voula. He leaves behind a cherished legacy in his grandchildren: Rosalyn Owen, Marcie Jackson, William Campbell, Sofia Allen, Maggie Allen, and Ryan Allen; and great-grandchildren: Glen McGuire V, Kalie McGuire, Clayton Jackson, Weston Jackson, and Seth Jackson. He was deeply proud of his grandchildren and took great joy in watching their lives unfold.

The family would like to extend their heartfelt gratitude to the compassionate and dedicated team at Traditions Memory Care in Newton, who cared for Jimmy with such love and kindness. He was known for always reassuring them, never wanting to be a burden, with a gentle smile and his familiar words, “I’m fine, honey.”

A life well lived, a table well set, and a man deeply loved—Jimmy Palmas will be greatly missed.

A celebration of life memorial will be held on Saturday, April 4 from 2:00 to 4:00 p.m. at Ernst Funeral Home (80 NE Dartmoor Drive, Waukee, IA 50263). Family and friends are invited to visit at any time during these hours. For those wishing to send a flower arrangement condolence; those can be delivered to the funeral home and will be displayed at the celebration of life memorial.
